The culinary influence of Tuscany on French cuisine, particularly in chicken dishes, is largely attributed to Catherine de’ Medici, who brought Florentine cooks and culinary techniques to France after marrying King Henry II, leading to dishes like Chicken Florentine and potentially even the “fricasse” technique.
While French is nature, “Ã la Florentine” meaning “Florentine style”, is used in French cuisine to describe dishes featuring spinach, a protein, and Mornay sauce with heavy influence from Italian dishes.
In the past, Italian cuisine focused more on game and poultry, with hunters using wild birds, eventually transitioning to chickens as they became more readily available. Our dish takes on a French flair with our white wine-Dijon mustard Cream sauce but with our favorite traditional Italian flavors.
