History of Creste di Gallo
It is believed to have originated in
Florence, Italy, during the 16th century. Legend suggests the Medici family honored roosters that alerted them to an assassination attempt by creating this pasta. Its unique ruffled, curved shape makes it suitable for various sauces and dishes.
The name “Creste di Gallo” reflects a long Italian tradition of naming pasta after whimsical or familiar shapes — like farfalle (butterflies), lumache (snails), or orecchiette (little ears). The combination of corn and pancetta in pasta dishes is a relatively modern pairing, often found in variations of Italian-American cuisine.
